Veggi Tofu Salad Spread

This is one of my favorites:

What you need:

  • 1 pound of firm tofu
  • Shredded organic carrots
  • Chopped celery
  • Chopped scallions
  • Chopped Green pepper
  • Chopped Red pepper
  • Nutritional yeast flakes
  • Tamari
  • Eggless mayonnaise
  • Shelled, raw sunflower seeds
  • Alfalfa sprouts
  • Pita pockets or tortilla, or your other favorite type of sandwich bread
  • Put tofu in large mixing bowl and mash with fork. Sprinkle some tamari into tofu and mix. Sprinkle a couple of tablespoons of yeast flakes into the mix, (taste it and see if you need to add more) then add all veggies and sunflower seeds. Mix slightly, then add enough mayonnaise to give it the consistency you want. Mix thoroughly and use for dip for chips and/or as a sandwich spread.

    Stuff pita pockets with this mix, add some alfalfa sprouts on the top and you have an excellent substitute for egg salad sandwich! Some have even put this mix open face on a slice of their favorite toast, sliced cheese on top, and broiled it to melt the cheese on top. Very decadent! Enjoy!
